I like to make my Guacamole with a good amount of chilli in it. The creamy texture of the avocado flesh is cut by the red chilli and citrus flavour of the lemon. Choose avocados that are not over ripe or you will get a mush rather than a good textured guac!
It’s so simple but doesn’t keep long as avocado tends to discolour quite quickly (a good reason to question what goes in the mass produced stuff) so get it eaten whilst its fresh.
- Two avocados, peeled and de-stoned
- The juice of half a lemon
- Half a red chilli, deseeded and finely chopped
- A good pinch of sea salt
Put all the ingredients in a bowl and mash with the back of a fork. Don’t get too giddy with the mashing as a few little avocado lumps are rather nice.
