It is no lie to say, that these simple chicken skewers were so popular that I never even got change to snap a quick picture before they were whisked off the plate and devoured. Makes six skewers.
- 250g diced chicken breast
- Teaspoon of honey
- 1cm piece of fresh grated ginger
- Tablespoon of soy sauce
In a small bowl, mix the ingredients together, cover with cling film and leave for at least 3 hrs in the fridge.

2 tablespoons of sesame seeds
Toss the sesame seeds over the chicken, turning to ensure that the chicken is evenly coated
- Half a red and half a yellow pepper, diced into 1cm peices
- Six wooden skewers
Soak the skewers in a little water for around five minutes to stop them burning whilst cooking.
Thread on the chicken and peppers.
Cook under a grill or over hot coals until the chicken is cooked through and the peppers have begun to blacken.
Serve with some coconut rice or a crisp salad.
