If you are suffering from the excess of New Year’s Eve then a super easy, super quick soup is just the thing you need. Its also super kind on the purse strings*.
- 1kg bag of frozen stewing vegetables
- 2.5 pints of vegetable stock (water, x2 vegetable Oxo cubes)
Put the vegetables in a large pan, pour over the stock, bring to the boil and then reduce heat to low to simmer the vegetables until tender. Blend until smooth.
Add some salt and pepper if you like or even a dollop of pesto, or a sprinkle of cheese.
Makes approximately 2.5 litres of thin soup. If you prefer a thicker, heartier soup reduce the liquid to about 2 pints.
