You know when you have one of those weeks where you are so busy and food is the last thing on the agenda and what you get is what you eat? Last week was like that for us. We ate a load of rubbish, too much fat, too much salt and not enough of anything decent. The net result being a bad tempered child and a spotty, tired mummy. So, this week I am doing my best to get us back on track with plenty of fresh vegetables, fruit and water. I have cheated somewhat by adding a vegetarian recipe box to my shopping list, but what the hell! Three meals for two all ready to be assembled.
The first has not failed us – linguine with purple sprouting broccoli, garlic, lemon and chilli. Amazing. All the ingredients in little bags, weighed out and ready to be chopped and thrown in the pan.
